Parm Chicken Parm Parm

Did you get my Bow Chicka Wow Wow reference in the title?  Just me?  Okay then, moving on.

Tonight we had a yummy and skinnified version of an all-time comfort food:  Chicken Parm.  Here were a few short cuts to save on calories:

  • Used just a little bit of shredded low fat cheese (mix of provolone and mozzarella) instead of 5lbs of heavy cheese on top of the chicken
  • Used Orzo pasta instead of spaghetti (I don’t know – maybe we ate less pasta this way?)
  • Cooked in a pan instead of frying, then threw it in the oven to melt the cheese

 

It took about 30 minutes to make, which for a weeknight isn’t too bad.  I got the recipe here and we’ll definitely make it again.  And now, for you visual people out there:

Chicken breast strips bathed in bread crumbs and seasoning

Add some tomato sauce and cheese - then toss in the oven for a few minutes to melt!

Voila!

Did I mention it was yummy?
