Picadillo Yumminess!

Tonight’s dinner was one of my favorites and was a hit!  We made cuban picadillo with a few more spices than I’ve used in the past and it was delish.  My new mini food processor makes things like chopping onions so much easier and efficient!

The jist of the picadillo is ground beef mixed with a bunch of spices and a tomato base.  It’s served over brown rice so it’s nice and warm and filling without a ton of calories.  160 calories for about a cup (with rice, add another 150 calories which still isn’t bad)!  We used this recipe and have added it to our favs.

Not pictured:  the brownie I demolished post-dinner.  Don’t worry, it was tiny.  Oh, and delicious and worth every bite.
