With a title like Beef, Cheese and Noodle Bake, you can’t go wrong, right? RIGHT!
On the menu for tonight was a delicious (and health conscious) recipe I found in Cooking Light, and it was yummmmy! It was another night of multiple things going on at one time (boiling pasta, sauteing veggies, simmering beef, making sauce), but thankfully, Chris is a great help and we were able to get everything done without anything going wrong.
The only adjustment I made to the recipe was using spiral whole wheat pasta instead of the elbow (I couldn’t find the whole wheat elbow pasta at my store), but I don’t think it will make a huge impact in calories, so I’m okay with it. It was nice to have some “comfort” food without the guilt that goes along with normal comfort food (I also added a ton of shredded carrots for more veggies, so that helps with the guilt, too). :) Under 300 calories per serving – you can’t beat that!
